There is an old Irish proverb which encapsulates my week cooking with Sunshine: laughter is brightest where food is best. I watched and learned, chopped and stirred, rolled and whisked, and cooked cooked cooked along to a soundtrack of Otis Redding and laughter. Sunshine’s knowledge of ingredients and enthusiam for food were infectious. He was generous with his skills and is a natural teacher; professional, patient and encouraging. Sunshine made me want to be better and to aspire to his high standards, engendering a sense of pride and achievement. I was the only vegetarian in the group and rather than this being a hindrance Sunshine demonstrated his versatility as a chef by creating dishes especially for me to cook and eat which were truly exceptional. And while the time in the kitchen was joyful Sunshine and his amazing food were also the catalyst for good conversation, company, empathy and the beginnings of friendships around the table. I arrived under a cloud and left with my mind eased and with skills I will have for life. Grazie mille Sunshine!
